Watermelon "Cakes"

 

Desserts are a favorite part of a meal for most people, if not everyone. Something sweet is the perfect way to finish a meal, but often desserts are just too rich. Watermelon is sweet and juicy and very versatile. Add a timeless classic—Cool Whip—and you got yourself a simple, light and tasty dessert!

Watermelon Cakes

Yield: 4 cakes

Ingredients:

1 seedless watermelon, cut into 1-inch thick slices (can be cut in half first)

1 container Cool Whip

1 lemon, zest

2 oranges, 1 zest 1 thin slices

Mint

Equipment:

Knife

Spoon

Zester

First, cut the watermelon into the 1-inch thick slices. You can now either use a 3-inch circle cookie cutter or cut the watermelon into triangles by cutting the slices into quarters and then cutting the rind off. You will want 12 pieces total (3 per cake).

Next, mix the zest of the lemon and the orange into the cool whip. Carefully spread some on one piece of melon and top with another piece. Repeat again until all 3 pieces of melon are stacked—repeat for the remaining cakes. Now, spread some cool whip onto the top piece and garnish with a slice of orange and some mint. Enjoy!
