Vegan Mushroom Bacon

Ingredients:

  • 2 large portobella mushrooms, sliced 1/4in thin
  • 1tbl liquid smoke
  • 1/4c maple syrup
  • 1tsp smoked paprika
  • Salt and pepper
  • Coconut oil

Equipment:

  • Bowl
  • Pastry brush
  • Sheet tray
  • Parchment paper

Line the parchment paper on the sheet tray and grease with coconut oil. Combine the liquid smoke, syrup and paprika. Dip the mushroom slices in the liquid mixture. Line the slices on the sheet tray and place in a 350F oven. After about 10 minutes, go back and brush the bacon with the mixture, flip and repeat on the other side. Repeat again after another 10 minutes. Allow to bake for another 10-15 minutes. Pull and line on a paper towel. They will crisp up nicely once cooled.

These make great BLTs, topping for salads or soups or just to go with your breakfast!
