Strawberries Galore!

 

Calling all my snowbirds in Florida! Now is the time to get some fresh strawberries. Not only are strawberries a delicious and healthy snack, you can also make so many things with them! Here are a few recipes with strawberries that you can use for any occasion—parties, holidays or just because!

Sparkling Strawberry-Orange Sangria

Ingredients:

  • 2 cups strawberries, sliced
  • 2 oranges, sliced into rounds (reserve a few for garnish)
  • 1 bottle rose
  • 1 cup orange juice
  • 1 cup tequilla
  • 1 bottle champagne
  • Ice

Equipment:

  • Pitcher
  • Wooden spoon
  • Glasses

Combine berries, oranges, rose, juice and tequilla in pitcher. Stir. Allow to chill.

Pour into glasses over ice and add some of the fruit until about ¾ of the way full. Top with champagne and garnish with a slice of orange.

Tip: for a quick holiday twist, add some cranberries and do ½ cup orange juice and ½ cup cranberry juice!

Quick and Easy Chocolate Strawberry Trifle 

Yield: 4 servings

Ingredients:

  • 4 cups of strawberries, sliced
  • ½ cup of white sugar
  • 4 cups of chocolate cake, cut into cubes (store bought makes it easier)
  • 3 cups of whipped cream
  • Mint, for garnish

Equipment:

  • 4 tumbler glasses or pint mason jars
  • Spoons
  • 1 bowl

Place the sliced strawberries in a bowl and toss with the sugar. Set aside to macerate for up to 30 minutes (this will help some juice come out of the berries and sweeten them even more).

While the berries are sitting, you can cut up the chocolate cake. Place some of the cake in the bottom of the glasses, about ½ a cup each. Spoon some of the berries with juice on top, then do a layer of whipped cream. Repeat once so the layers bottom to top are cake, berries, cream, cake berries and cream. Garnish with some mint. These will hold for up to 4 hours in the refrigerator, so they are a great dessert to get ready ahead of time!

Spinach Salad with Strawberries, Goat Cheese and Almonds

Yield: 4 servings

Ingredients:

  • 1 bag of baby spinach, cleaned
  • 1 cup of strawberries, sliced
  • ½ cup of dried cranberries
  • ½ red onion, sliced
  • 1 small log goat cheese, crumbled
  • ¾ cup almonds, sliced or slivered
  • Dressing of choice (balsamic is best with this! Click here for our balsamic dressing recipe)

Equipment:

  • Large salad bowl
  • Serving tongs

Place the spinach in the bowl and top with strawberries, cranberries, red onion, goat cheese and almonds. Serve with salad tongs.

You can also plate directly onto salad plates in this order. Top with your favorite dressing and enjoy!

Tip: You can also use feta cheese if you don’t like goat cheese!
