New Year's Day Pork Roast

 

They say eating pork on the new year brings good luck, so why take the risk that it doesn’t? Here is a simple and super delicious recipe for crock pot pork roast with sauerkraut with gravy. Don’t forget the mashed potatoes to go with it! You can find that recipe here.

Pork Roast with Sauerkraut 

Yield: 6-8 servings

Ingredients:

  • 4lbs pork butt, bone in
  • 1lb sauerkraut
  • 6 garlic cloves, peeled
  • Salt and pepper
  • 1 beer (Labatt Blue works wonderfully here!)

Equipment:

  • Crock pot
  • Paring knife

Cut small 6 small slits throughout the pork and stuff the garlic in them. Salt and pepper the outside generously.

Add the kraut to the crock pot and place the pork fat side up. Pour the beer around the pork. Turn on high and cook for 6-8 hours until pork reaches the internal temp of 145F and is tender.

Pork Gravy

Yield: 3 cups

Ingredients:

  • ¼ cup butter
  • ¼ cup flour
  • 3 cups pork broth (if you can find any, use chicken broth or mushroom broth)
  • Salt and pepper

Equipment:

  • Sauce pan
  • Whisk

Melt butter in pan and add butter, cooking until a light golden brown color forms and it smells nutty. Stir this constantly or it will burn! Add the broth and whisk to combine. Season with salt and pepper. Bring up to a simmer and cook for another 5 minutes until thick.
