Grilled Portobello Mushroom Sandwich

 

Whether you're trying to cut meat out of your diet, or you know you need to eat more veggies, this portobello sandwich is beyond delicious! 

Ingredients: 

4 large portobello mushrooms, stems removed 

Handful of arugula

Bun of your choice 

4 slices of provolone

Roasted red pepper aioli (see below) 

Thinly sliced white onion

Salt and pepper to taste

Spray oil

 

Method: 

Heat a grill up and spray the mushrooms with oil. Sprinkle with salt and pepper and grill both sides until soft and 4 minutes first side and 3 minutes the second. After you flip it, place the cheese on to melt. Set aside and build your sandwich: Bun, some arugula, the onions, mushroom, aioli, bun. Enjoy! 

 

Serve with fries, chips or a salad! 

Roasted Red Pepper Aioli

Ingredients: 

1 cup mayo

2 large roasted red peppers

2 tsp garlic

salt to taste

 

Method: 

In a food processor, blend all ingredients together until smooth. Store in an air-tight container in the fridge.
