This salad is so good. It can be eaten so many ways and can be changed up super quick by omitting the cilantro or adding mango!
1 can corn, drained
1 tbsp olive oil
1 can black beans, drained and rinsed
1 small can tomatoes, drained
½ cup red onion, finely chopped
2 avocados, not super ripe
1 tbsp chili powder
2 tbsp lime juice
2 tbsp chopped fresh cilantro
Over your fire, heat a griddle. Toss the corn in the oil and char slightly on the griddle. Do this with the jalapeno as well until the skin is black. Wrap in some foil and let steam for a few minutes. Scrape the blackened skin off and chop the jalapeno up finely.
Cut the avocados into small cubes. Combine all ingredients in a large bowl and serve with chips, salad, tacos, burritos--take your pick!
